Heuvos rancheros

Ranch eggs are just silly good. A perfect poach from a free range chicken, toasted tortilla, black beans, cheese and pepper jelly (Alabama). SO GOOD!!

Beans: sauté onions and garlic. Toast cumin seeds and crush I. A mortar and pestle. Add beans, cook on medium heat for ten minutes. Crush the beans with a coffe cup, scraping with a spatula till mushy.

Top it with mozzarella and cilantro. Water should be at a hint of a boil and the eggs should cook for only about 4-5 minutes. Don't forget to hit it with some kosher salt. Get everything prepared and then cook the eggs. Drain the eggs on a paper towel.

Cracked pepper.
